2008 November > Delight Your Palate at the Maple LCBO My wife and I attended a cooking class at the LCBO Maple on September 29 with recipes prepared by Chef Paul Mattina, owner of Mattina’s Cucina in Georgetown. Chef Mattina prepared escargot with dried fruit and Frangelico on puff pillows, Prosciutto-wrapped salmon with mustard and sage, and fig bread pudding with Calvados cream, and Banana Foster. The food was amazing. We had a great time and Chef Mattina also shared some secret tips with us. We were provided copies of the recipes, although I doubt any of us could ever recreate those dishes to Chef Mattina’s perfection. We also tasted wine that complimented the food that was prepared, with descriptions of the wine provided by Leslie Marsh, Product Consultant.
